This cake has that old-fashioned flavour that is especially satisfying when eaten with some good, strong, freshly brewed coffee!
What You Need:
1 cup walnuts, chopped
1 1/2 teaspoons cinnamon, ground
1 cup brown sugar, firmly packed
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 cup unsalted butter, softened (not melted)
1 1/2 cups white granulated sugar
3 eggs, large
1 cup sourcream
1 1/2 teaspoons pure vanilla extract
What to Do:
Preheat your oven to 350°F. Prepare your pan: butter a 10" tube cake pan, dust with flour and tap out excess.
In a small bowl, mix walnuts, cinnamon and brown sugar. Set this aside.
Into a medium bowl, sift flour, baking powder and baking soda. In a large bowl, beat butter and 1 1/2 cups white sugar in large bowl until fluffy. Add eggs, one at a time, and beat just until combined after each addition. Mix in sourcream and vanilla extract. Add flour mixture and stir until well blended.
Pour half of this batter into prepared tube pan. Sprinkle with half of the brown sugar mixture, and swirl gently using a small knife. Pour remaining batter over, then top with remaining brown sugar mixture.
Bake your (amazingly delicious) coffeecake until a tester inserted near its centre comes out clean, about one hour. Let cake cool in pan for ten minutes, then turn out onto rack and let cool completely.
